I made this up when I had a chuck roast and wanted something without any processed carbs, like Lipton’s onion soup. The amounts of the soy sauce, red wine vinegar, and worcestershire sauce are approximate because I didn’t actually measure them.
- 1 chuck roast (3-4 lbs.)
- 1 tsp vegetable oil
- Grill seasoning (I used McCormick’s chicken, because that’s what I had)
- 2 medium onions, sliced
- 1/4 cup soy sauce
- 1/4 cup red wine vinegar
- 1T worcestershire sauce
Heat oil in large saute pan over medium-high heat. Rub roast all over with grill seasoning. Once oil is smoking, sear roast on each side for a couple minutes until it’s brown and crusty.
Put sliced onions in bottom of slow cooker. Add browned roast. Mix remaining ingredients and pour over roast. Cook on low for 10-12 hours, until roast is fork tender. Skim fat, slice, and serve.
